Hi everyone!

As you might have already seen on my new personal Instagram account I’m (by coincidence) participating in the Vegan Challenge. The Vegan Challenge is a challenge where you eat 100% vegan for a whole month, and since I already ate most of my meals vegan (except for snacks and cheatmeals in the weekends :p) I decided that this might be a fun challenge! The hardest parts for me are the weekends, because then I’m really craving some comfort like pizza or burgers! But luckily I found this recipe last week of these yummy, grillable, vegan burgers that don’t fall appart while making them! (I think everyone who made vegan burgers before knows this struggle) I wanted to share this recipe with you guys because these burgers where just so delicious! Especially combined with a spelt bun, spicy sauce (1 part vegan mayonaise, 1 part curry and some sambal), caramalized red onions and sweet potato fries on the side.

What you’ll need for about 4 patties (I made 3 big ones)
– 1 can of black beans
– 75 grams of brown rice
– 60 grams of raw walnuts
– 10 grams of bread crumbs (I used ‘Bolletjes Boeren donker volkoren beschuit’ because it was the only thing I could find without eggs and dairy)
– 1 small white onion
– 1/2 tablespoon of each chili powder, cumin powder and (smoked) paprika powder
– 1/2 teaspoon of salt (skip this if the beans are already salted) and crushed black pepper
– 30 grams of BBQ sauce (make sure it’s vegan!)
– Some oil to cook

First of all cook the rice by the instructions // While the rice is cooking you can toast the walnuts for about 5-7 minutes and let them cool // When you’re done toasting the walnuts sauté the onion that you’ve finely diced in some oil for about 3-4 minutes until translucent // Once the walnuts are cooled but them in a blender or food processor with all the spices (and in my case the ‘Beschuit’ as well) to achieve a fine flour-like substance // Drain the canned black beans (make sure to save the water, because I will share another recipe soon where you can use this!) and add them to a large bowl. Mash the beans with a fork while leaving a few beans whole for a little bit of ‘bite’ // Add the cooked rice, the onion, the BBQ sauce and the spice-walnut mixture to the beans and mix thoroughly with a spoon for about 2 minutes until you have a moldable dough // Make patties your desired size of the ‘dough’ and prepare them how you prefer! I baked them for 3-4 minutes each side, but you can also grill them for that real BBQ feeling! Throw them on a bun (or eat them like this) and use toppings you prefer, you can go everywhere with them! And the best part is once you made a pattie out of the dough you can also freeze them and just de-freeze them and bake them like usual for an easy 10-minute comfort meal! Enjoy!
