Hi everyone!

I want to share more food recipes on my blog! Since I live on my own for two months now already I’m bein more creative with (healthy) cooking, and I want to share some of these recipes with you! Please let me know if you think this is a good idea :)
Today I want to share this recipe for sweet potato/black beans chili with you guys! It’s vegan , easy to make and super yummy! you can eat it with rice, or wrap it up in a tortilla with some toppings like lettuce/spinach and sour cream (when you do so it’s not vegan anymore of course). And the best part i’s that it’s actually better the day after, so when you have some leftovers it’s the perfect lunch for the day after!

What you’ll need:

– 500 gr of sweet potato (one small one, or a half big one), peeled and diced
– 1 400 gr can of black beans, rinsed
– 1 onion, finely cut
– 2 cloves of garlic, minced
– 1 can of diced tomatoes
– 2 teaspoons of oil
– 1 tablespoon of chili powder
– 1 teaspoons of cayennepepper
– 2 teaspoons of cumin
– a pinch of salt
– 300 ml of water
– juice of a half lime

Heat the oil in a pan and add the onion and sweet potato and cook this for 4 minutes until the onion is softened // Add the garlic, chili powder, cayenne pepper, cumin and salt and cook this for about 30 seconds // Add the water, bring it to a simmer and cover when it cooks and let it gently simmer on reduced heat for 10/12 minutes // After the 10/12 minutes, add the beans, tomatoes and lime juice. Bring this to a simmer again and let it cook for about 4 minutes // Now your chili is done! You can either heat up some tortilla wraps or cook some rice to eat it with! Enjoy!
