I think every (trying-to-be) healthy foodie has heard of Bananabread before! ;) I tried it a few times already and a few days ago I decided to make it myself. I made a variation with apple-pieces inside the batter, and baked apple and dates on top of it. It turned out pretty well, although I could have baked it a bit longer since the middle part was a bit too moist. Oh! And I should’ve made the apple pieces for in the batter a bit smaller as you can see on the picture! :p
But overall it turned out pretty good, so I decided to share this recipe with you guys and I hope you like it!
What you’ll need for one bread:
– 2 ripe bananas
– 3 eggs
– 90 grams of oats
– 130 grams of flour
– 2 apples + a bit of butter
– 4 big and juicy dates
– 1 tablespoon + 1 teaspoon of apple syrup (appelstroop)
– a pinch of salt
Preheat the oven on 200 degrees Celsius // Cut the apples and dates in pieces. put 1/3 of apple pieces in a pan and bake them with a bit of butter. Then add the one teaspoon of apple syrup plus the dates. Put this aside when done // Mix all the dry ingredients in a bowl. squash the bananas on a plate and mix the eggs in a seperate bowl, then add these two to the bowl of dry ingredients. Finally add the rest of your apple pieces and the one tablespoon of apple syrup to your mix // Put this batter in a cake mold and evenly spread the apple/date mixture on top of it // Bake your bananabread in the pre-heated oven for about 40 minutes with a bit of baking paper on top of it to prevent the apple/date mix from getting to brown (I totally forgot this step! But the taste was still great, not burnt at all!). Maybe you can also try to bake it longer like I’ve stated above // Now enjoy!
